Any recommendations or sections to read up on to learn about CCTV cams?
Im familiar with computer science and a bit of networking, got a job soon related to CCTV's, looking to learn more about CCTVs, and NVRs. Just not sure where to start.

DORI principles is a topic you want to fully understand, also understand we are really talking about effective pixels .. as often in low light with cheaper cameras / camera components the effective pixels are significantly reduced.
