Any idea why my picture/video quality changes when viewing/recording. I have reset camera but still ongoing.

The IR is turning off momentarily when it sees it has enough light for full color with no IR.

What are your day profile's settings? ( mode, sensitivity, delay, etc.)
What about night?

Do you have a motion or other floodlight that comes on there?

+1 Yep. Take it off auto and force it to B/W at night.
